Bay Rum Spice Tree, Pimenta racemosa, is a highly ornamental and fragrant tropical tree treasured for both its peeling trunk and aromatic foliage. The bark naturally curls and exfoliates in thin layers, creating striking texture and visual interest that makes the tree stand out even when not in bloom.
The stiff, leathery leaves are richly scented and widely used in cooking and tea brewing. Traditionally, the leaves were steeped in rum and water before distillation to create the classic “bay rum” fragrance, giving the tree its well-known name. Today, the leaves are still harvested for essential oils and aromatic extracts.
Clusters of white, fragrant flowers appear with a soft, fluffy look and gradually give way to small, inedible berry-like fruits. Though not eaten fresh, the berries carry notes of cinnamon and clove and are valued for essential oil production. Thriving in warm, frost-free climates with full sun to partial shade and well-drained soil, Bay Rum performs best in USDA Zones 10 to 11.
